That's sure not the way I remember it but mind you the last time I
passed through it was 53 years ago along old highway #2.

Title: Country Durham Pork with Pease Pudding
Categories: British, Pork, Peas
Yield: 6 Servings
3 lb pork hand
6 Sage leaves
6 Peppercorns
3 Parsnips
1 Carrot
1 Onion
1 sm Turnip
1 Celery rib
1 sm Cabbage
1 pt Peas: split, green
Salt and pepper
Mint leaves, optional
1 oz Lard
1 Egg
Soak the green split peas overnight. Place meat in a large
saucepan, cover with warm water, bring to the boil, skim, boil for
15 minutes, then add sage, peppercorns and vegetables all cut up
coarsely. Half an hour before meat is done, add quartered cabbage.
Tie the split peas in a cloth with a sprig of mint and seasoning. Tie
securely, but allow room for peas to swell. Suspend bag in pan with
boiling pork and boil for 1 hour. Take out, and rub peas through a
coarse sieve. Mix in the lard and an egg.

A hand of pork is the same cut as a picnic ham, more or less.
