Yes, they too have a fine reputation.

I was actually. All three of them are competent cooks and two of
them are enthusiastic about it.

Title: Cerone's Shrimp/Broccoli Stuffed Eggplant
Categories: Appetizers, Shrimp, Stuffing, Cheese, Eggs
Yield: 16 servings
8 oz Shrimp, cooked and chopped
8 oz Broccoli cooked/chopped
1/2 c Olive oil
2 md Eggplants
7 Eggs
1 c Seasoned flour
2 c Seasoned breadcrumbs
16 oz Ricotta cheese
2 tb Grated parmesan
1 tb Chopped parsley
1/2 c Mozzarella shredded
Salt and pepper
Oil to fry
ALFREDO SAUCE:
2 c Heavy cream
1 c Parmesan grated
1 ts Garlic minced
2 tb Butter
Slice eggplant lengthwise into 1/4 inch slices. Dredge in flour
and saute in olive oil. Mix the ricotta with 2 eggs, Parmesan and
Mozzarella cheeses, parsley, some basil, salt and pepper. Add the
shrimp and broccoli. Put 1 ounce scoop of filling in center of
each eggplant slice, roll and freeze for 2 hours.
Lightly beat remaining eggs and dip eggplant rolls in eggs and
then breadcrumbs. Deep fry in 365 hot oil. Place fried rolls in a
oven for 15 minutes and serve with the alfredo sauce. For sauce
place all ingredients in saucepan and whisk until thick over heat.
Serve beneath eggplant rolls.
Makes 32 rolls, 16 appetizer sized servings
